TIMOUSSE was made with fruit from the Blue Ribbon orchard: more than twenty varieties of apples (including Jeffreys and Knob Russet), ten varieties of pears (including Bartlett, Citron and Amer) as well as Mont-Royal and Tonka plums.
The plums were macerated whole in a vat for 3 weeks and then decanted and pressed. This maceration, coupled with a slow fermentation of 2 months, brings to this non-disgorged cider all the aromatic of the plum.
