70 % Bitter and bittersweet apples from Brittany (Dous Moën, Marie Ménard, Douce Coëtligné and Kermerrien) blended with 30% of eating apples (Granny Smith and Gold Rush) from the Gard. The apples come from organically farmed orchards. The apples are handpicked early November and matured in pallox for 2 weeks. They are then sorted, washed, crushed, and pressed. The juice is fermented between 8 and 10°C by indigenous yeasts in stainless steel tanks. After 4 months and several rackings, the cider is bottled and finishes its fermentation under pressure to capture the effervescence. It is aged on lees for 9 months before disgorging. No added sulfites.

We started creating our domain in 2015 in Aubais, Gard (South of France). We have gradually been able to acquire vineyards and olive orchards since our beginning and now farm biodynamically 10 hectares under the Demeter label.

We have vines planted on the yellow marls of Saint-Mamert-du-Gard, a terroir particularly suitable for whites, and Grenaches and Cinsaults on limestone from the Valanginien in Aubais and Aujargues, a terroir that brings a lot of minerality and lightness to our reds. We prioritize old vines in order to go back to massal selections and have managed to take over several plots planted in the 1960s. Our estate is therefore quite fragmented, which is why we mainly produce single-variety parcel cuvées.

Le Quai à Raisins is our grape sourcing project in partnership with winemakers from different terroirs. With them, we produce cuvées with grape varieties endemic to their regions. 

Our wines are vinified by indigenous yeasts without additives and bottled with less than 20mg/L of sulfites. A minimalist but precise vinification allows us to obtain pure and vibrant wines with a real expression of the terroir.
