"Bright intense dark cherry red colour with a ruby rim and great viscosity. The aromas are very pure dominated by violets, strawberries and subtle smokiness, a bit of spice when the wine is young, after 5 – 7 years the aromas get more complex, extremely energetic and with good concentration. The wine is almost generous with an intense structure and richness in harmony with the fine and noble tannins. It is neither too rough or too heavy, the body has an extremely silky texture and the acidity brings energy and liveliness. The aftertaste is a pure delight."

Additional Information

The bunches are handpicked and handselected from our centenary vineyards in Bairrada (3 to 4 bunches/vine). Partly destemmed, fermented in open oak “lagares” with some extraction (pigeage). After fermentation the wine is aged in 500/600l used “pipas”. Chalky clay midslopes from the Jurassic Inferior with eastern orientation to the sun and a very intense Atlantic influence (we are only 15 km from the ocean). For this wine the grapes come from different small plots of our oldest vineyards (80 – 130 years). These 3 centenary vineyards we bought already some years ago and are fully converted to biodynamics. Inspired in the viticulture of Filipa ́s grandmother, these vineyards are the real heritage of the region. They give an exceptional complexity to the wine, thanks to the expression of the Baga grape from different and well defined locations. When you work centenary vineyards with Biodynamic pratice, you really understand the notion "un grand terroir".

Our philosophy is simple: create authentic wines without make-up, they express the true nature of the vineyards from which they come. We focus on indigenous grapes only. Baga, Bical, Arinto, Cercial and Maria Gomes create soulful wines from vineyard sites with soils, microclimate and aspect ideal for growing our exquisite wine grapes with biodynamic viticulture practices. In the winery we gently handle the grapes, minimal intervention and strict monitoring of the wine allow our grapes to express themselves fully. Ultimately, we create “terroir” wines by uniting knowledge, art and nature to produce “without make-up”, each wine with its own character. Filipa Pato - winegrower in Bairrada. A graduate of the University of Coimbra as a chemical engineer refined her winemaker skills doing harvests in Bordeaux (France), Mendoza (Argentina) and Margaret River (Australia) and with her father, Luis Pato, the Baga Rebel. In 2020 Filipa was elected winemaker of the year in Portugal by Revista de Vinhos, the first Portuguese woman to earn this title in 30 years. William Wouters, chef/sommelier/restaurateur. William comes from a restaurateur family from Antwerp (Belgium). He is a sommelier champion, award winning restaurateur and former head chef of the Belgian national soccer team on the 2014 FIFA World Cup in Brazil and the 2016 UEFA European Cup in France. Together Filipa & William share all their experiences: the love for food and wine encounters with great wine growers, friends, sommeliers and wine lovers from all over the world and the magical inexhaustible culture of the world of wine.
