"A bright, crisp, light, fresh and delicious sparkling wine, floral with notes of citrus and golden raspberries. This is a beautiful and well-balanced wine with a nice tension between flavors, acidity and moderate alcohol. A hint of yeast left from the wild yeast fermentation brings a nice mouthfeel. Easy to drink, soft bubbles, can be consumed right away."

Additional Information

Using Méthode Ancestrale, we crafted a dry, crisp, and delicious Pétillant Naturel. This refreshing Pét-Nat brings out the pure fruit flavors of our Petite Sirah grape and its terroir, with notes of citrus, golden raspberries and pomegranate. A well-balanced wine with a good tension between flavors, acidity and low alcohol, and a nice mouthfeel brought by the live yeasts. The fruit was carefully hand-picked and delivered to the winery in the cool early hours of the day, hand-sorted, and fermented using only wild yeasts from the vineyard. We bottled the wine prior to completing its first fermentation, allowing the fermentation to finish in the bottle without any additives. This method imparts a gentle carbonation to wine by trapping the carbon dioxide produced during the fermentation of the natural sugars from the grapes. This wine is alive and can be aged for many months, producing different flavor profiles over time as the wild yeasts continue to slowly mature the wine in the bottle. Unfined, unfiltered, contains only naturally occurring sulfites. Alcohol 11.5%, pH 3.2, Acidity 5.4g/L, Residual Sugar 14.5g/L. For the bottle, we choose the old flip- top bottle format which reminds us so much of the lemonade bottles of our childhood. And the pure and happy art from Ylias Zajac, who was 8 years old at the time, is a perfect match to that pure and happy wine! Only 415 cases produced. We are a family farm growing natural agriculture grapes and crafting natural wines from our own estate vineyard in Mendocino county, Northern California. We strive to grow living soils and to produce beautiful healthy grapes in harmony with natural cycles. We are artisanal winegrowers and work on every single step, from growing our grapes to bottling the wine. Our family lifestyle is in harmony with the way we grow the grapes and make our wines and everyone is involved: the lables are designed by our two sons who also help us during harvest by driving the tractors.

In the vineyard, we follow the natural farming philosophy: no fertilizers nor pesticides of any kind, no-tilling, and dry-farming. This produces beautiful healthy vibrant grapes, and promotes and sustains a wondeful diversity of life in the vineyard and on the farm.

In the cellar, we don't use any additives of and we don't fine or filter. This produces pure vibrant wines that feel very alive in the mouth by respecting the living community in the wine and the natural fermentation and aging processes.
