Canyon Coffee is a Los Angeles based roaster specializing in single origin organic and Regenerative Organic Certified coffees. Founded in 2016 by couple Ally Walsh & Casey Wojtalewicz, they grew over six years as a wholesaler & online retailer of coffee, ceramics and home goods before opening their first cafe in Echo Park in 2022. For the founders, coffee and wine share many similarities — when done well, it always goes back to the soil. As longtime wine enthusiasts, they're very excited to be providing the caffeine hit for RAW WINE. |

The Jolly Oyster was made out of the need to alleviate the world's overfishing crisis by producing top quality, sustainably produced seafood. Specializing in Kumamoto and Pacific oysters, the Jolly Oyster controls the complete production cycle from their hatchery producing the seed through their own farms to your table. They're known for bright, unique, in-house recipes that flatter the seafood, while bringing out the joy in life. Shigeru Nakaminato is the head chef and founder of Japanese and natural wine restaurant ‘Bunon’ in Tokyo’s Nishi-Azabu, and will be serving his sushi rolls at RAW WINE Los Angeles. Shigeru comes from a culinary family, with a grandfather who worked as a fisherman and at a sushi restaurant before opening a fresh fish shop, at which his father worked as a fishmonger. In 1994, Shigeru opened his own fish and wine shop just next door called ‘Uochutei’, before opening a Japanese cuisine and wine restaurant two years later called ‘Minato’ in Akasaka, Tokyo. Finally, Shigeru opened Bunon in 2008, from which he is joining the fair as a guest chef. |
