We try to use common sense: we assess the vineyard site, the viticulture, the terroir. Everything is done manually, without intervention. Manual press, vinification with indigenous yeasts without so2. We use very old barrels (more than 50 years), fiber tanks, stainless steel tanks and amphorae. We make still and sparkling wines (Ancestral and champenoise). Not filtered or clarified. Disgorging by hand. The vineyard (old vines) are planted on albariza soils. Our winery are located in the ‘Barrio Alto’ in Sanlucar de Barrameda (DO Sherry), a popular neighborhood and winemaking tradition. It is a very small Bodega of a palatial house with wooden ceilings and walls of earth and stone.
