Ca'Liptra

We are located in the CRU of San Michele, the warmest area of ​​Cupramontana with full sun exposures, from south to south-east. However, a soft breeze coming from the Adriatic Sea caresses and refreshes its steep hills. The winery manages old vineyards organically which have been recovered and partly renovated over the years. The plots are divided into nine parcels for a total of 8.5 hectares. They have different exposures, soils, altitudes, between 200 and 400 meters above sea level, and an average age of around 50 years. The vineyards are grassed and are treated exclusively with organic products, avoiding any intervention with synthetic products. No fertilization is carried out and green manure is practiced. The work in the countryside follows the rhythm of the seasons, is carried out manually and, during the harvest, the grapes are collected in small boxes. The fermentations are spontaneous, without the addition of adjuvants and/or additives. Furthermore, no invasive techniques are used. Sulfur dioxide is added every year based on the characteristics of the finished wine until it reaches a maximum of approximately 50 mg/l for whites and 30 mg/l for reds and macerated wines. All the particles are vinified separately to understand the characteristics of each individual terroir even more deeply. The wine rests on the lees at the end of fermentation until its complete maturity, aging in concrete or steel tanks or in medium-large oak barrels.
