Those of Castelcerino are the highest vineyards in the Soave zone: the hills reach up to 400 meters above sea level. Here Filippo Filippi grows his old Garganega and Trebbiano di Soave vines, almost all of which were planted in the 1950s. Cultivation is carried out according to the precepts of organic farming, respecting the natural cycles of the vines and the sustainability of the environment. The considerable difference between day- and night-time temperatures serves to concentrate the typical aromas of the area’s two indigenous grape varieties.  The vineyards are cultivated using the traditional Pergola Veronese training system and cover a total of 15 hectares (40 acres) of land, subdivided into three different Soave crus:  Castelcerino, Monteseroni and Vigne della Brà. Each single vineyard is characterized by very different soils, which influence in a very marked manner the mineral sensations in the wines: Castelcerino has terrain of volcanic origin and is rich in basaltic rocks, Monteseroni has limestone soils, and Vigne della Brà has a mix of basaltic rocks and limestone. Each individual cru is surrounded by dense woodland, which occupies a total of 20 hectares (50 acres) and includes the oak and chestnut trees from which the posts that support the vines used to be made. The winery is housed in an old building: the marble comes from quarries, traces of which can still be found in the woods. Vinification is carried out without forcing anything, and respecting the natural time each individual wine takes to mature.
