We are Charlie and Simon, two old friends originally from Sydney, who after seperate careers in music in our 20s, came together in our 30s to make non-interventionist wines of place, which we have been making together since 2017. Chateau Acid is exclusively made with fruit from a single biodynamic and certified organic vineyard, named Rosnay Estate in the central ranges of New South Wales, Australia. We make Vermentino, Chardonnay, Shiraz and Grenache from this 10Ha block. For the first few years, 2017-2020 we made our wines in the cellar at Rosnay, but have since expanded to our own cellar and vineyard (our estate wines are under a yet-to-be-released label name Seaview Ridge). We hand pick the fruit ourselves and transport to our cellar, where we process, age and bottle the wines. All wines are made without fining, filtration or additions aside from up to 30ppm so2 when required.
