I have been producing natural ciders and perries since 2020. I'm located in south of Normandy (Orne). Always accompanied by my Australian shepherd dog. All fruits are hand-harvested and I glean them in high-stem and untreated orchards. Lengthy and low temp fermentation using only indigenous yeasts. A natural carbonation ensures fine and elegant bubbles. No sulfites or other additives are used. All my cuvees are vintage designated. Two years ago, I also began producing co-fermentations of several fruits, combining apples, pears, quinces, grapes and even rhubarb. In addition to gleaning fruit, I also started planting orchards by selecting and grafting old, local apple and pear varieties, as my grandfather had done.
