The estate is run in accordance with the rules of organic farming, but above all, with common sense. Each operation is carefully thought through to limit inputs and the use of agricultural machinery, and to adapt the technical itineraries to the needs of each plot. The quality of the soil is preserved by combining spontaneous grassing, the cultivation of green manure and the spreading of compost. Harvested by hand, the grapes are then transported in small crates to the winery in Arboras. I accompany the grapes on their way to becoming wine, trying to influence them or impact them as little as possible. I try to intervene only to avoid defects or deviations, because let's not forget that nature alone would make vinegar and not wine! All my wines are fermented exclusively with indigenous yeasts. I work without enzymes or synthetic products.
