The family estate is at the highest point in the Champagne wine region, 369 meters above sea level. Mondeville dominates the rugged, picturesque terrain of southern Champagne. In this southern part of Champagne, in the center of the Côte des Bar, Champignol-lez-Mondeville is a place that leaves no one indifferent, where man has been at one with nature for centuries. Over time, it has become a family wine estate, generous by nature, where light and matter come together to produce a unique Champagne.
After studying agronomy and oenology, and gaining experience in France and abroad, Laurent returned to the land of his birth. As for Delphine, a biologist and ecologist by studying, with a long-standing passion for vines and wine, she is making her contribution to this ambitious project. Their convictions guide the daily choices in the vineyard and cellar. This project is called Domaine de Mondeville.
In 2018, they committed the entire 15-hectare vineyard to Organic and Biodynamic Farming, and in 2021 they will harvest the first AB-certified grapes. The soils are clay-limestone on Kimmeridgian soils. The average age of the vines is 40 years. The vines are 90% Pinot Noir, with Chardonnay and Arbanne (a local variety rare in Champagne) rounding out the vineyard. Their aim is to work sustainably in the vineyard, preserving biodiversity, keeping the soil alive and healthy and keeping their vines strong and resistant to external aggression.
In the cellar, Delphine and Laurent use a well-designed gravity system to eliminate the use of sulphur and carry out natural vinification in the spirit of the Demeter specifications. To mature some of their wines, they use oak barrels from the village forests.
The vintages are free of any artificialities or inputs, and the wines are lively and precise.
There is no chance in nature, everything is mastered.
The aromas are typical of the Jurassic-Kimmeridgian terroir of this part of the Côte des Bar: citrus and exotic fruit. The Pinot Noir character is present in the structure and texture, while retaining elegance and freshness.
The cuvées are those of their terroir, a land rich in meaning, spirit and ties. A land with which they live and grow. Vibration of the heart, breathing of nature, explosion of the spirit... storm in the glass, they will transmit to you this ENERGY OF THE WINE.
