About
"It is in Ardèche, in the municipalities of Mirabel and Lussas, that our vineyards are located on two different terroirs: Argilo-calcareous soil for Mirabel and basalt soil for Lussas. Our first vintage was in 2009, and we built the cellar in 2011 in the municipality of Villeneuve de Berg."
The vineyards have been cultivated using organic agriculture since 2009. We do not have a predefined method. Each vintage is different, and we adapt our work according to our numerous plots of different grape varieties (eleven in total), the terroir, vine age, and exposure.
Just like the work in the vineyard, the work in the cellar is adapted according to the vintage. The diversity of plots and grape varieties allows us to "have fun" with each vintage by varying the winemaking method without changing the essence of the cuvées.
The grapes are harvested either in 12 kg crates or in 300 kg containers (palox). If necessary, a second sorting is done at the cellar. Whether destemmed or not, the grapes are gently transferred into the tanks by gravity and then aged in either tanks or barrels, depending on the cuvée.
Generally, once in the tanks, we intervene as little as possible. The maceration periods are usually relatively short.
