Domaine Philémon is a mixed farming operation with viticulture as its main activity. For 20 years, we have always been keen to maintain of the diversification carried out in eco-grazing by a small flock of Solognote sheep. truffle oaks, grapestable, and a plantation of Helichrysum (immortal from Italy) preserve the ecosystem. Our wines are produced with historic Gaillac grape varieties: Braucol, Duras and Prunelart for reds and Loin de l’Oeil and Mauzac for whites and grape varieties forgotten: Jurançon Noir for reds and Ondenc and Mauzac Pink for white . The vine is cut into a goblet, traditional pruning without trellising made of iron so as to respect the harmony of the strain and the landscape, as well as a better drought tolerance. Grapes harvested by hand wafin that each vintage expresses all its singularity. So we we made the choice to vinify in natural wines, without any additives oenological, with doses of sulfur less than 25mg/l.
