Formiche is comprised of four friends: Simone, Gigi, Dylan, and a second Simone. Three winemakers and an agronomist, they crossed paths and shared experiences in various parts of the world before finding themselves back in Tuscany. The project, which started in 2018, is focused on one place—the Maremma coast—and one grape variety, Ansonica, a late-ripening white variety (with an alluring golden hue once ripe).
Ansonica has been planted along the coast of Tuscany and its nearby islands since the 11th century. Considered more rustic by modern oenological standards, it has often been replaced by more aromatic and “on-trend” grapes. Today, Ansonica is cultivated on only a few hectares and is characterized by a high capacity for sugar and tannin accumulation with a strong marine identity. Formiche's wines stand out as an elegant interpretation of this variety, thanks to their light soil, old vineyards, and proximity to the sea.
The red, sandy soils with abundant marine deposits are kept healthy with cover crops and green manures. Only copper, sulfur, and herbal teas (such as common horsetail, nettle, and willow) are used, at minimal dosages and only when strictly necessary. At harvest, grapes are evaluated and picked plant-by-plant, ensuring that only the ripest bunches are selected. In the cellar, unnecessary interventions are avoided, pursuing the idea of a natural evolution of the musts and striving to accompany in the cellar what the vintage expressed in the vineyard. Fermentations are spontaneous, whole bunches are gently pressed, no clarifications or fining are performed, and sulfur is added only when necessary.
