La Zafra is a land maintenance project in Monóvar, Alicante (in the south of Valencia). We are the sixth generation to cultivate these lands of almond, olive, saffron and vineyards for winemaking, with which we make our natural wine in an old winery that we have recovered.
We started with 1 hectare of vineyards of the Monastrell variety, native to the area, grown organically, rainfed and pruned in goblet (traditional). We currently manage 7.5 hectares of vineyards, of which 5.5 hectares are in production, and 2 hectares are in the process of being replanted.
We make our natural wine in a small traditional winery, in the most respectful way possible: without added chemicals, correctors, or sulphites.
We only work with local varieties, such as Monastrell, Valencí Negre, Garnacha Tintorera (Alicante Bouchet) for rosés and reds, and Messeguera for white and orange-golden wines.
