We run a 7 ha vineyard in organic mode, certified, where we apply Korean Natural Farm techniques to improve the soil health and vigor of the vines. We do low intervention wines - our wines are grapes and a touch of sulphites. No yeast from a jar, no enzymes, no temperature control, but we have a winery with stone walls a meter thick, no finning, no filtration, no stabilization, no nothing. We foot trodden each wine, wines and reds, in 300 years old granite open vats and most of our wines go to used french oak where they stay with full lees, if they are not in skin contact, until they are bottled. The filling is made by gravity and most of the processes are made by hand with no help from machines.
