Fermentation in wooden open top fermenters using the Vineyard's indigenous yeasts, with no additions or subtractions to or from the must. Maturation in 100% new French Oak for approximately 24 months. If necessary fining with egg whites. Wines of elegance, balance, finesse and longevity.
