The Raspini Winery is a small winery, a micro-winery in fact, with vineyards in the Kaiserstuhl region (in Germany) that focuses on low-intervention wines. Roberto is originally from Sicily, where he studied oenology and viticulture. After working in Sicily, Campania and Andalusia, he came to the Kaiserstuhl, where he and his wife Sonja pursue their passion in the warmest region of Germany. Respect for nature and its diversity is crucial, which is why we completely avoid chemical treatments or pesticides. Both the vines and the wine are worked by hand. This goes from the work in the vineyard to the work in the cellar to the bottling. The wines are about quality and not quantity, therefore the yield of the old vines is reduced to a low 30-50 kg/ar, thus achieving a high concentration in the berries. The harvest is very early to preserve the acidity. After careful harvesting and selection, the grapes are crushed by foot in a very old-fashioned way. We prefer spontaneous fermentations in old barriques to obtain a subtle but not overpowering oak note. The wines then age in these barrels until bottling. Pure nature, no filtration, no fining, no machines, moved only by gravity. And of course: very limited quantities.
