In Foglianise, in the Sannio district of Taburno, we produce natural wines using genuine artisanal methods.
Our vines aged between 15 and 50 years come from 5 small unique plots located between 300 and 400 meters high for a total of about 3 hectares.
The vines are cultivated with respect for the earth, without any use of synthetic products, and treated only with copper and sulfur when necessary to prevent disease or mold.
We vinify the grapes of each parcel separately. Our hand-picked grapes ferment in open vats, in prolonged skin contact without temperature control. As per the local peasant tradition, these are mostly mixed varieties that we vinify together, the only exception being Aglianico Rosato MU', a single variety vinified in white.
The fermentations are spontaneous, activated by indigenous yeasts naturally present on the grapes without the use of selected yeasts, adjuvants or oenological additives.
We do not carry out clarification, filtering or stabilization. Sulfur dioxide is never added, at any stage. After a couple of rackings and months of élevage on fine lees, in glass, fiberglass, or steel, we hand-bottle our wines.
*Robb de matt! : Italian dialect expression meaning “Crazy stuff !”
Robb de Matt represents a gleefully political act, a somewhat crazy attempt to sing well but out of the chorus, to make wine in a sweetly visionary way and away from the empty rhetoric of the territory for sincere, generous and intoxicating wines. We take into account tradition and we start from it to experiment new ways for new landing places.
