About
San Donatino is a family-run natural company in Castellina in Chianti. We only work our land and our grapes: 16 hectares of vineyards on 3 climat at 250-420 above sea level. In the vineyard we have precise rules: - Minimum soil tillage - Grassing and green manure - Manual management and harvesting, according to Maria Thun's calendar - No products of synthetic origin - No forcing of natural cycles In the cellar our vision is consequent: - Indigenous yeasts - No temperature control - No additives - Low (or zero) sulfites
